Janmashtami Recipes

 

       1) Nariyal Magaz Barfi

Ingredients:

  • Melon seeds- 1/2 Cup
  • Grated coconut- 1 1/2 Cups
  • Sugar- 1 1/2 Cups
  • Water- 1 Cup

Method:

  1. Heat a pan.Add grated coconut and saute for 4-5 minutes on a low flame. Keep aside.
  2. Add melon seeds in the pan and saute for 3-4 minutes.
  3. Add  1 ½  cups sugar and 1 cup water in a pan. Bring to a boil. Let it simmer until the syrup reaches two string consistency.
  4. Add grated coconut and melon seeds in the syrup.Mix well.
  5. Pour the mixture into a greased tray.
  6. When it cools cut into small cubes.

 

      2) Dates Laddu

Ingredients:

  • Deseesed Dates- 1 Cup
  • Grated coconut- 1 Cup
  • Cashew nuts- 12-15 Pieces
  • Almonds- 10 Pieces
  • Raisins-10-12 Pieces
  • Cardamom Powder- 1/4 Tsp
  • Poppy seeds-1 Tbsp
  • Ghee- 1 Tbsp

Method:

  1. Finely chop dates, cashew nuts, and almonds.
  2. Heat ghee in a pan. Add finely chopped dates and fry for 4-5 minutes.
  3. Add chopped cashew nuts and almonds. Fry for another 2 minutes.
  4. Add grated coconut, poppy seeds, cardamom powder, and raisins.Mix well and switch off the stove.
  5. Let the mixture cool for some time. After that divide it into 14-15 equal portions and roll into balls.
  6. Once they are cooled completely, store them in an air tight container.

 

3) Panjeeri

Ingredients:

  • Aata-1 Cup
  • Powdered Sugar-1 Cup
  • Dry fruits-1/2 Cup
  • Ghee-2 Tbsp

Method:

  1. Heat 1 tbsp ghee in a pan. Fry the dry fruits till golden brown. Keep them aside.
  2. Add 1 tbsp ghee in the same pan and add aata. Fry the aata on low to medium flame till golden brown.
  3. Add fried dry fruits and mix them well.
  4. switch off the stove. let the mixture cool completely.Add powdered sugar and mix well.
  5. Panjeeri is ready.

4) Singhara ka halwa

Ingredients:

  • Singhare ka aata(Water chestnut flour)-1 Cup
  • Ghee- 2 Tbsp
  • Powdered sugar-3/4 Cup
  • Cardamom powder- 1/2 Tsp
  • Grated coconut- 1/3 Cup
  • Finely chopped dry fruits- 2 Tbsp

Method:

  1. Heat the ghee in a pan on medium heat. Add singhara ka aata.Mix well.
  2. Roast the aata till it turns light golden brown in color. It will take about 8-10 minutes.
  3. While roasting the flour, boil a cup water in another stove.
  4. Add hot water to the mixture and stir well to avoid lumps.
  5. Once water is absorbed add sugar. Keep stirring and mix well till ghee starts to leave from the halwa.
  6. Turn off the stove. Add cardamom powder and mix well.
  7. Garnish it with chopped dry fruits.

5) Dhaniya and Coconut  Barfi

Ingredients:

  • Coconut powder-1 1/2 Cups
  • Coriander powder(Dhaniya)-1 Cup
  • Melon seeds-4 Tbsp
  • Sugar- 1 1/2 Cups
  • Water- 3/4 Cup
  • Cardamom powder- 1/4 Tsp
  • Ghee- 2 Tbsp

Method:

  1. Heat ghee in a pan.Add melon seed and saute for 2 minutes and keep aside.
  2. Add coriander powder and saute on low flame for 2-3 minutes. Keep aside.
  3. Add coconut powder in the pan and saute for 1-2 minutes. Keep aside.
  4. Now Add  1 ½  cups sugar and 3/4 cup water in the same pan. Bring to a boil. Let it simmer until the syrup reaches two string consistency.
  5. Add coconut powder, coriander powder, cardamom powder and melon seeds in the syrup.
  6. Keep stirring and mix well.
  7. Turn off the stove.
  8. Pour the mixture into a greased tray.
  9. When it cools cut into small cubes.
